New Englander Lauren Aloise founded a small company to help visitors discover the gastronomic riches of Madrid, her adopted home. She offers three themed tours: “Tapas, Taverns & History;” “Huertas Neighborhood Food & Market;” and “Ultimate Spanish Cuisine.” We chose the latter, which began at 10:30 a.m. and took us to the bustling San Miguel market, a superb pastry store and a tapas bar, among other stops. We tasted some 15 Spanish specialties during four delightful hours with our charming guide. Most of the places we would never have discovered unaided. Buen provecho!
