“Chef Frank Pabst is known for his skill with seafood,” says Mr. Harper, which is exactly what you’d hope to hear regarding a restaurant specializing in fruits de mer. Located in the old warehouse district of Yaletown and home to one of Vancouver’s most beautiful patios, Pabst describes Blue Water Café’s menu as “an intriguing mix of Western European and Eastern Asian cuisines with a West Coast focus.” Here, diners enjoy expansive sushi and caviar menus, as well as the award-winning wine list.
On the Menu: “Choosing a favorite dish would be like choosing between my twin daughters. We do have crowd-pleasers on our menu, though. These would be our various seafood towers, sablefish, halibut, Dungeness crab and our braised short ribs.”
At Home: “During summer and winter, we cook a lot on the barbecue. We cook whole chickens, homemade pizzas, prawns, salmon, steaks and halibut.”
