On the Menu: “A favorite dish was a cheese course centered around Sierra beauty apples. The apples were dried for a three-month period in which they became pruned with a fuller flavor. We stored the apple leaves in a salt solution for a few weeks to add a subtle brine, and then wrapped them around a fresh goat cheese. These components were then served with a dense porridge bread made with fermented koji rice.”

At Home: “We cook simple and healthy at home—usually fresh fish and vegetables.”
