Summer Cocktail Series: Cabo Green Margarita

The second post in our 'Summer Cocktail Series' comes to us from the sandy beaches of Cabo San Lucas, Mexico. This recipe from Esperanza Resort holds the key to a well balanced margarita - simple, fresh ingredients and absolutely no mention of sweet and sour mix.

Esperanza Resort's Cabo Green Margarita

  • 2 oz Silver Tequila (100% blue agave)
  • 1 oz pineapple juice
  • 4 slices cucumber, plus 1 ½ slices cucumber for garnish
  • 7 leaves fresh cilantro
  • ½ oz freshly squeezed lime juice
  • ½ oz agave, honey or simple syrup
  • Ice
  • 1 teaspoon Tajin (a seasoning of chili pepper, lime & salt powder) for garnish, optional

Put the cucumber, cilantro and tequila into a shaker, muddling the the cucumber and cilantro into the tequila. Strain out the solids, reserving the liquid. Add the remaining ingredients (except the Tajin powder) to the shaker along with the tequila. Fill the shaker with ice and shake it for 10 seconds. Serve the cocktail immediately in a margarita or whisky glass, rimmed with Tajin.

If you prefer to have your Cabo Green Margarita frozen, add all the ingredients (except the Tajin powder) into a blender and serve.
