Dating from the 12th century, this romantic small fortress stands amid the rolling chalk hills of the South Downs, 60 miles southwest of London. Beyond a massive portcullis set into 60-foot-high walls is an enchanting 12-acre formal English garden with clipped lawns, fish ponds, a water cascade and resident peacocks. The 19 guest accommodations are individually decorated with antique furniture, rich fabrics and traditional artwork. Charming Deluxe Rooms are located in the Bishopric, a beautifully renovated 17th-century dairy. Meals are served in the barrel-vaulted Queen’s Room, adorned with armor, swords, axes, tapestries and a 1686 mural, or in The Great Room (no children under age 8 permitted). On-site outdoor activities include croquet, tennis, garden walks and an 18-hole putting course.
Baths can be on the small side; only five feature tubs and separate showers.
Lowest Rate: Classic Room, $350; Editor’s Choice: Deluxe Room, $740 (minimum stay may apply).
