Just an hour north of Phoenix, this resort dates to the late 1880s. Towering 100-year-old date palms line the entry to the canary-yellow lodge, one of the few remaining historic buildings on the property, which houses the lobby, bar and dining room. Overseen by chef Christopher Brugman, Harvest serves excellent cuisine that employs produce from the on-site kitchen garden. The property lacks televisions, as guests are encouraged to disconnect, but Wi-Fi is available. Rooms are spacious and contemporary, with large fireplaces and indoor-outdoor baths. Guests can hike to the source of the springs and soak in 120-degree mineral water. (There are also two pools that are cooler.) Guests under the age of 16 are not permitted. The hotel operates seasonally from October to May.
